FROM BEAN TO CUP: A CASE STUDY OF THE NORDIC COFFEE FEST IN FOOD SCIENCE

Introdução

The Nordic Coffee Fest 2024, held in Gothenburg, Sweden, was a significant event that celebrated the coffee culture in the Nordic region. The festival aimed to showcase leading roasteries from the Nordic countries, offering delightful coffees for the attendees. A highlight of the event was the Nordics Best Roaster competition, which displayed the skills and expertise of the region’s top coffee roasters.

Material e Métodos

The competition took place in two rounds, with roasters from the Nordic countries applying to compete by submitting a bag of roasted coffee to an international selection jury. From these coffees, ten finalists were selected to compete in the finals at the Nordic Coffee Fest. Application: Roasters involved submitting a bag of their roasted coffee. Selection: From the pool of applicants, an international selection jury carefully evaluated each submitted coffee. The jury was composed of experienced individuals in the coffee industry. They used a set of criteria to judge each coffee, which may have included aspects like aroma, flavour, aftertaste, acidity, body, balance, and overall quality. Ten finalists were selected to compete in the finals. The ten selected finalists competed in two rounds: Mandatory Coffee: This round tested the pure roasting skill of each company. Selected Coffee: This round allowed the roasters to demonstrate their supply networks, philosophy, and style. Roasters were invited to select their own coffee for this category, as long as it met some qualifiers: a region and maximum price per kg of green coffee ($20 USD). This round highlighted the importance of the raw ingredient in the final flavour of the roasted coffee.

Resultados e Discussão

The winner of the “Best Roaster - Public Choice Awards” was Standout Coffee. Each competitor roasted the two categories of coffee at their roastery before sending the coffee to Gothenburg for the Nordic Coffee Fest.

Conclusão

The festival also had a strong focus on sustainability, producing only 443 kg of general waste, which is less than 230 g per participant. The Nordic Coffee Fest 2024 was an innovative event that highlighted the diversity and uniqueness of the coffee culture in the Nordic region.
