CHICKEN STERNAL CARTILAGE AS A SOURCE OF BIOACTIVE HYDROLYSATES

Introdução

Chicken sternal cartilage is commonly regarded as an industrial by-product in poultry processing and is usually applied in animal feed. Due to its high protein content, it can be a source of protein hydrolysates that present interesting bioactive properties, adding value to this by-product.

Material e Métodos

In this study, the potential of chicken sternal cartilage as a source of antioxidants and acetylcholinesterase (AChE) inhibitors was evaluated.

Resultados e Discussão

Two enzymes were tested in the cartilage hydrolysis: Alcalase (pH 8, 50°C, 1.8%enzyme:substrate) and Flavourzyme (pH 7, 50°C; 1.8%enzyme:substrate). The use of Alcalase resulted in higher cartilage digestion (97.42% yield), and the produced hydrolysate showed a 1.8-fold higher capacity for AChE inhibition than Flavourzyme-catalyzed hydrolysate. The hydrolysate generated with Flavourzyme showed a 1.3-fold higher capacity on TBARS inhibition (74.2%) than the hydrolysate produced with Alcalase. Analysis of the hydrolysates' amino acid profiles via HPLC revealed the presence of 18 amino acids, including 6 hydrophilic and 12 hydrophobic varieties. Noteworthy, tryptophan, tyrosine, and histidine showed statistically similar (p > 0.05) concentrations across both hydrolysates.

Conclusão

Particularly, the tryptophan/LNNA (Large Neutral Amino Acids) ratio was elevated in the Flavourzyme-generated hydrolysate, potentially associated with its enhanced TBARS reduction potential. Moreover, the increased total amino acid content observed in the Alcalase-produced hydrolysate may be attributed to its effectiveness in AChE inhibition.
